Course Overview

You will begin your nutrition journey learning how to identify signs of hunger and the importance of fueling your body adequately. Nutrition impacts us physically, cognitively, and emotionally; developing an understanding of how foods we eat affect us can help foster a healthy relationship with food.

1

Food is Fuel

In this section, learners will see how the foods they eat provide the body with energy to operate at its best. They will be introduced to the essential nutrients the body needs - including macronutrients and micronutrients – and they will start to think about the positive impacts of adequate nutrition.

Reconnecting with Hunger Cues

This section introduces learners to the concept of Intuitive Eating. Learners will learn how to identify signs of hunger and fullness and how to use these skills in a practical sense. They will also learn about the term 'diet culture' and how and why to reject it.

What You Eat Matters

Learners will dive deeper into learning about macronutrients - carbohydrates, fats, and protein. Learners will come away understanding why each one is important to their health and well-being and be able to identify optimal sources of each nutrient.

Digestion

Now that learners have a baseline understanding of how macronutrients and various micronutrients impact the body, they will take their learning one step further by seeing how these nutrients are digested. Through various scenarios, they will see how the timing of when you eat and what you matters.

Meet Course Creator, Rachel Cohen

Hi! I am Rachel Cohen. I have my Master of Public Health in Nutritional Sciences from the University of Michigan and am a Registered Dietitian. Prior to my career as a dietitian, I taught elementary and middle school in the Washington, DC area. I am passionate about helping people make sustainable lifestyle changes and improve their relationship with food. Outside of my work as a dietitian, I enjoy hiking, playing soccer, reading historical fiction novels, trying new recipes, and spending time with my family.
